4tbspn Organic Butter
75g Organic Plain Flour
50g Organic Wholemeal Flour
1 1/2 tspn bicarbonate soda
1/8 tsp salt
1tsp Organic Ground Cinnamon
40g Organic Oat Bran or Bran
75g Organic Raisins
50g Dark Brown Sugar or Organic Sucanat Sugar
50g Organic Demera Sugar
1 Organic Egg
250ml Buttermilk
Juice of 1/2 an Organic Lemon |

Preheat oven to 200. Grease a 12 cup muffin tray.
Place the butter in a heavy-based saucepan and melt over a gentle heat.
In a mixing bowl, sift together the flours, bicarbonate of soda, salt and cinnamon.
Add the bran, raisins and sugars and stir until blended.
In another bowl, mix together the egg, buttermilk, lemon juice and melted butter.
Add the buttermilk mixture to the dry ingredients. Stir lightly and quickly just until moistened; do not mix until smooth as this will ruin the texture.
Spoon the batter into the prepared muffin tray, filling them almost to the top.
Bake until golden, for 15-20 minutes. Serve a room temperature. |
