Agave syrup is a honey like sweetener made from the blue Agave plant in Mexico. This is the same species used to make tequila and its sweetening properties have only recently been discovered.

Agave is less viscous than honey and because of its high percentage of fructose (90% fructose-10% sucrose), Agave has a very low GI rating, making it a great option for diabetics or anyone wanting to lower their intake of sugar and honey.

In recipes, substitute ¼ cup of Agave for every 1 cup of sugar required.

Dark agave is as sweet as the light agave whilst retaining the full flavour of the agave nectar, wheras the light agave is sweet without the rich agave taste.
