Ingredients: milled organic rye grain

Rye is a cereal grain, closely related to wheat. It is mainly grown as a bread grain, for livestock feed or for distillation into grain alcohol spirits.
Rich in B-vitamins, rye contains generous amounts of iron, calcium, phosphorus and potassium and also has the highest amount of lysine of all grains.
Produced by stone-milling the whole rye grain. No further processing or refinement. No additives. The nutrient-rich properties of the whole grain, and in particular the bran, are therefore retained. Moderately dark in colour with a strong, robust flavour. Low gluten content. Easily digestable. Must be refrigerated of frozen to retain freshness.
USES: Breadmaking - Rye Flour can be used to make yeast-raised bread, but because of the limited gluten content, these are relatively "heavy". Rye flour is often mixed with other flours to make lighter loaves. - Pumpernickel is a heavy, moist, strongly-flavoured bread made from wholegrain rye and caraway seeds, Baked foods such as pancakes, muffins or biscuits and makes an excellent natural sourdough starter.
